Hemp Tabbouleh
Traditionally made with bulgur wheat or couscous, this hemp alternative provides an added (and complete) protein boost to this fresh middle eastern inspired side dish.
This makes the perfect side to grilled chicken or fish, or a warm flavourful Mediterranean stew.
Made with a few simple ingredients it is super easy to toss together and can be served immediately or stored in the fridge for later in the week, only becoming infused with more of the wonderful flavours with time!
Toss the following ingredients together in a bowl:
1 cup hulled hemp
1 ¼ cups finely chopped fresh parsley
½ red onion finely chopped
1 large red bell pepper finely chopped
Then add:
Juice of 1 fresh lemon (or more if you like it lemony!)
2 Tbsp. extra virgin olive oil
Salt and pepper to taste
Potential add-ins can include fresh chopped mint, garlic or finely chopped tomato. So experiment and see what you like best!
